Raw Cucumber Mint Salad Recipe 2

Cucumber mint has always been a winning combination in my mind. From lotion to green juices, and now a yummy raw food salad! 

I spiralize the cucumber for a really thin crunch. Salting and draining your cucumber beforehand will ensure it retains that crunch. Be sure to peel your cucumber if you were unable to get organic cucumbers.

The addition of raw kelp noodles, baby spinach, on-hand garden tomatoes and a little bit of crunch from the hemp seeds rounds out this salad and turns it into a lunchtime meal. The lime acts as a simple dressing, though a vinaigrette dressing would also do the trick.

  • 1/2 cup spinach
  • 1/2 cup kelp noodles
  • 1/2 large cucumber spiralized
  • handful of tomatoes
  • 2 teaspoons hemp seeds
  • sprig of mint
  • juice of 1 lime
